This recipe is perfect for a potluck, appetizer or main meal. Gluten, dairy and egg free so everyone can enjoy!
Meatball Ingredients
2 lbs lean ground beef
1 lb ground pork
2 12 oz pkgs bacon
white onion
2 tsp gluten free original bbq sauce
2 tsp gluten free maple syrup
1 tsp gluten free soy sauce
1/2 tsp cayenne pepper
1/2 tsp garlic powder
11/2 tsp smoked paprika
1/2 tsp salt
3 tbsp light brown sugar
Glaze ingredients
1 tsp gluten free soy sauce
4 tbsp gluten free original bbq sauce
4 tbsp gluten free maple syrup
4 tbsp light brown sugar
1 tsp cayenne pepper
Directions
1) Preheat oven 400° F.
2) In a large bowl add forums beef and pork.
3) Dice 1/4 white onion and set aside.
4) In a small bowl combine all glaze ingredients and whisk until fully combined. Set aside.
5) In a small bowl mix 1 tsp soy sauce, 2 tsp bbq sauce and 2 tsp maple syrup. Set aside.
6) In small bowl mix 3 tbsp brown sugar, 1/2 tsp salt, 11/2 tsp smoked paprika, 1/2 tsp garlic powder and 1/2 cayenne pepper. Add to meat and mix with hands to insure it gets fully combined.
7) Add the soy sauce bbq mixture in meat and mix with hands.
8) Add diced onions and mix with hands.
9) Using 1 tbsp spoon scoop out meat and form into a ball and place on nonstick baking sheet. Do this until you used all the meat. This should make 44 meatballs. You might have to do two batches of meatballs. This depends on how big of a baking sheet and oven you have.
10) Take bacon out of package and cut in half. Wrap bacon around meatballs and stick a toothpick in middle.
11) Bake for 20 minutes.
12) Take out after 20 minutes and brush the glaze on the meatballs. Use the toothpick to pick up and turn meatball while glazing.
13) Bake for additional 15 minutes.
14) Let cool for 5 minutes.
