This warm creamy soup is perfect for a chilly day. Gluten-free and lactose free. Can be made dairy free.
OK you guys when I crave something I will crave it hard-core until I get it LOL… This week it’s been cold or rainy weather and it’s made me crave creamy bacon potato soup! All my recipes are gluten-free. Most of the time I also do dairy free. But this recipe is lactose free not dairy free… There is a difference! My son and I ate on this for a couple of days. Don't tell anyone but I might of ate it for breakfast as well! Shhhh! Serves 4-6 people.
Ingredients 1.5lbs cubbed baby red potatoes
32oz fat-free chicken broth
3oz real bacon bits
salt & pepper to taste
1tbsp celery salt
1/2tsp ground white pepper
2cups of lactose milk (for dairy free substitute unsweetened almond milk)
3tbsp cornstarch
1/2cup diced green onions
1/4cup vegan butter
Directions In a large pot bring chicken broth to a boil, add red potatoes and boil for 10 minutes. Then add green onions, vegan butter, all spices and boil for 5 more minutes. In a separate bowl add 2 cups of lactose milk and whisk in 3 tablespoons of cornstarch, add to your boiling pot stir well. Add bacon bites and stir well. Turn the heat down to medium-low until it thickens then shut off and take off heat and let sit for 15 minutes. Add salt and pepper to taste! ENJOY!
